Although the method of grilling meat with a vertical grill has an ancient history, the method of preparing shawarma by grilling pieces of meat vertically and cutting them during grilling appeared for the first time in the form of doner kebabs in the nineteenth century, in the Ottoman Empire known today as Turkey.
In one version, it was said that shawarma is of Ottoman origin, specifically from the state of Bursa, and its manufacture dates back to the period between 1850 and 1870, by its inventor, Mehmet Iskandar Effendi, to whom the dish is attributed. His descendants, who inherited this profession from him, confirm that their grandfather Iskandar was the first inventor of the vertical skewer.

In a medium bowl, put the yogurt, water, tahini and ketchup. Mix the ingredients well with an iron spoon until you get a homogeneous mixture. In another bowl, mix garlic, olive oil, salt, white pepper and black pepper. Add the garlic mixture over the ingredients, mixing continuously until a thick mixture forms.
